‘Violet’ artichokes grow to about 4 ft, producing large deeply cut gray green leaves. The flower buds start a deep violet, and when they are ready to harvest they are a greenish-violet. The flavor is similar to standard artichokes, but finer – less strong and lacking in bitterness. Flowers are produced abundantly, especially if ample water is applied, and compost and slow release fertilizers are incorporated in at planting time.
Harvest is 120 days.
